The Food Hygiene (Scotland) Regulations (2006) state requirements for standards of personal cleanliness for the food handler and for the food handler to be free from infection. Assessment of the food handlers’ fitness must be based on the requirement within these standards.
Food that is contaminated by harmful micro organisms, in particular bacteria and viruses, can cause illness. Food handlers who are suffering from certain infections or are carrying the micro organisms in or on their bodies even if the individual shows no sign of infection can contaminate food.
Food handlers are individuals employed directly in the production, preparation and service of foodstuffs. This would apply to those employed directly in food production, preparation, service and sale in the manufacturing, catering and retail industry, and those carrying out repair or maintenance of equipment in food handling areas, including workers on contract and any other visitors to the food handling area.
Once the medical has been carried out a food handlers certificate will be completed and sent to the employer. Appropriate advice will be given to the employee at the time of the medical explaining the importance of good hygiene practices and the importance of reporting any illnesses or infections.
